Pad Thai in Thai Green Curry



Pad Thai is one of the Thailand's national dishes. It is a dish of stir-fried rice noodles with soy sauce, tamarind juice etc. Also bean sprouts, tofu etc are added along with Thai Seasoning. 


In this dish, I have added Thai Green Curry paste along with the vegetables used to make Thai Green Curry.  Something different, but tastes awesome.. 


Ingredients :
For Main dish
1 Packet Flat rice noodles ( Phad Thai Noodles) Approx 200 gms.or 2 large cups
2-3 tbspns Thai Green curry paste
2 cups blanched vegetables (Broccoli, Sweet Corn, French Beans, Carrot, Capsicum etc.)
3-4 diced mushrooms
1 tbspn Thai Seasoning Mix (Thai mix herbs)
3 tbspns coconut milk powder
2 tbspns olive oil or vegetable oil
Salt to taste


For Garnishing :
Roasted and peeled peanuts
Chopped Spring onions


Preparation :
Heat 4-5 cups of water in a pan
Soak the rice noodles in hot water for 30 minutes
Heat oil in a pan
Add the blanched vegetables and mushroom
Saute the vegetables for 3-4 minutes
Then add Thai green curry paste
Mix the curry paste in vegetables
Then add Thai seasoning powder and coconut milk powder
Add salt to taste
Add 1 -2 tbspns of water to adjust the consistency
Finally add soaked rice noodles to the curry
Stir for few seconds
Transfer it in serving bowl
Garnish it with roasted peanuts and chopped spring onion


Notes :
1. Thai Seasoning is kind of mix dried herbs available readily in market.
2. To make Thai Green Curry paste at home use


Ingredients :
1 chopped onion
8-10 green chilles,
4 garlic cloves
1 tbsp ginger (grated)
2 lemongrass stalks
2 tbspn chopped coriander
2 tbspns chopped mint leaves
2 tspn fresh lime juice
1 tsp salt

Preparation :
Transfer all the ingredients in blender
Add small quantity of water (or coconut milk) to facilitate blending
Grind it to paste

  4. Hi, I got the spice at Cost Plus Markets but what is the difference between the seasoning mix and herbs ? Where can one buy these ? Also in the green curry don't you use basil and not mint ?
