Veg. Thai Green Curry


Thai vegetable green curry is an easy to make recipe if the curry paste is kept ready.  I have used only  vegetables to make this curry, however, you may add paneer, tofu, or any other vegetables of your choice. This goes well with Steamed rice.




Ingredients :
2-3 tbspn oil / butter

4 tbspns Thai green curry paste
1/4 green capsicum, chopped in squares
1/4 red bell pepper, chopped in squares

1/4 yellow bell pepper, chopped in squares
1/2 Zucchini chopped in squares
1 cup chopped and blanched broccoli, cauliflower
2 blanched and chopped baby-corns
Water as required
1 tspn sugar
4-5 basil leaves
Salt to taste

To serve with :
Steamed rice

Preparation :
Heat butter  / oil in a  large pan
Once butter / oil is heated, add thai green curry paste
Stir-fry it for a minute or till it releases aroma
Then add uncooked vegetables to the mixture
Saute it for two minutes
Then add blanched vegetables
Ensure that vegetables are coated with paste
Add some water and cook for a minute
Then add coconut milk
Allow it to cook for further 5 minutes
Then adjust salt and sugar to taste
Add some basil basil leaves at the end
Serve hot with steamed rice

Notes :
1. Consistency may be adjusted by increasing or reducing the amount of coconut milk
2. Vegetables of your choice may be added into this curry
