Creamy Carrot Soup


Creamy Carrot Soup is a restaurant style thick and creamy soup. The texture and flavour of the soup leave a lingering taste for a long time. This dish is bound to be a hit among young and old.

Yield: 2 people

Approx. Time: 30 minutes

Ingredients:

2 tspns Butter
2 Nos. roughly chopped Onions
1 Bay Leaf
1 cup grated Carrot
2 glasses water
2 slices of Bread
1 cup Milk 
2 tbspns grated Carrots (sauteed in butter)
1/2 tspn White Pepper powder
1 tbspn Cheese Spread
1/4 tspn Chilli flakes
1 tbspn Fresh Cream
1 tspn Sugar
Salt to taste

Method:

Heat butter in a pan. Add chopped onions in the butter and saute. Then add a bay leaf and saute. Now add the grated carrot and saute it for 5 minutes. Then add water to it and cover the pan with a lid. Allow it to cook fully on medium flame. After the carrot is cooked, remove it from flame and allow it to cool. After cooling transfer it into a blender and blend it into a smooth paste. Now dip the slices of bread into water and add it into paste. Again blend it into smooth paste.

Now transfer the paste into another deep pan. Lower the flame to medium and add milk, Sauteed grated carrot, White Pepper Powder, Cheese Spread, Chilli flakes, Fresh Cream, Sugar and Salt to taste. Give it a boil. Adjust the consistency as per your preference and recheck the seasoning. 

Garnish it with Chilli flakes and fresh Cream. Serve hot with Garlic Bread or Soup Sticks.

Notes:

Instead of cooking it in an open pan, you may carry out the process (given in first paragraph) in a pressure cooker and give 3 whistles to the mixture.
