Raghavdas Ladu

Raghavdas Ladu is a traditional maharashtrian recipe. This is an improvisation of Rava (Suji) Laddus by using fresh grated coconut and mava as an additional ingredient. This is first prasad for my ganpati. And lastly, this has won a runner-up prize in the MasterChef India 2 contest!

Ingredients :

For Laddus :
4 cups rava (Suji)
1 & 1/2 cup pure ghee (For Laddus) + 1 tspn pure ghee (For mava)
1 & 1/2 cup fresh grated coconut
1 cup mava (Khoya)
10-15 peeled & chopped almonds
3 tbspns raisins
1 tspn cardamom powder

For Sugar Syrup :
3 & 1/2 cups sugar
1 & 1/2 cups water


Preparation :

For mava (khoya) :
Take 1 tspn pure ghee in a vessel
Cook mava in ghee till it is slightly red in colour
Keep it aside

For Sugar Syrup :
Take 3 & 1/2 cups sugar in a vessel
Add 1 & 1/2 cups water in it
Heat it on medium flame till it gets multiple strings (3-4 strings)


For Laddus :
Mix ghee and rava in a vessel
Roast ghee and rava mixture on low flame till it is slightly changes its colour. This process is time consuming and takes approx. 45 minutes.
When rava starts releasing aroma add grated coconut to the mixture
Cook it for further 10 minutes
Then add mava to the mixture
Mix well
Then pour sugar syrup into the mixture
Turn off the flame
Mix dryfruits and cardamom powder in the mixture
Allow the mixture to cool
It will take approx 2-3 hours for cooling
After cooling make medium size balls
Fix one raisin on the laddu


Notes :

The above quantity will yield 25 medium size laddus
If you want to avoid mava then cook sugar syrup till one string only
The laddus can be stored for 4-5 days outside refrigerator
