After long time I tried this punjabi recipe - Rajma Masala.
Ingredients :
2 & half cups Rajma (kidney beans)
4 finely chopped onions
4 + 1 tomatoes
3 tbspns oil
2 tbspns butter
2-3 bayleafs
10-12 black peppercons
5-6 cloves
1 & half tspn ginger-chilly paste
1 & half tspn garlic paste
1 tspn red chilly powder
1 tspn turmeric powder
1 tbspn corriander-cumin powder
1 tspn cumin seeds
1 tspn garam masala powder
2 tbspns finely chopped corriander
Salt to taste
Water for soaking rajma
1/4 tspn soda for soaking rajma
Preparation :
To cook Rajma :
Take some water in a vessel and add soda to it
Now soak rajma in that water for 6-7 hours
Take soaked rajma in pressure cooker vessel
Add bay leaf, black pepper, cloves and salt to it
Now pressure cook rajma till it is soft
To make tomato puree :
Heat water in a vessel
Add 4 tomatoes at its boiling point
Keep it in boiling water for 2 minutes
Remove it from hot water and pour cold water over it
Now peel off the skin of tomatoes
Transfer it in blender and make smooth paste
To make Rajma masala :
Heat oil and butter in a kadai
Add cumin seeds to it
Saute it for a minute
Now add chopped onion to the mixture of oil and butter
Saute till it is golden in colour
Now add ginger-chilly paste, garlic paste, and 1 chopped tomato to it
Continue cooking for few minutes
Now add red chilly powder, turmeric powder and corriander-cumin powder
Saute it for a minute
Then add tomatoe puree and cook till it starts leaving oil
Add rajma along with its stock
Add garam masala and salt to taste
Cover the vessel and allow it to cook for 5 minutes
Finally add fresh corriander
Serve hot with rice or roti
Notes :
The above ingredients yield rajma for approx 6 persons
