Vegetable Cutlet


Since long time I was waiting for an opportunity to make vegetable cutlets. And today due to long week-end, I could make it. Here is the recipe.




Ingredients :

1 cup chopped carrot
1 cup chopped french beans
1 cup green peas
1 cup chopped onion
1 cup chickpea flour (Besan)
3 medium sized boiled potatoes
1/2 cup chopped fresh corriander
3-4 tbspns oil
1 tspn ginger paste
1 tspn garlic paste
1 tspn green chilly paste
1 tspn garam masala
1 tspn aamchoor powder
1 tspn chaat masala
1/2 cup roasted semolina
Sallt to taste
Oil for shallow fry


Preparation :

Cook carrot, french beans and green peas in a steamer by adding a pinch of salt
Heat oil in a pan
Add chopped onion to the oil
Then add ginger paste, garlic paste and green chilly paste to the onions
Cook it for 5 minutes
Then add besan and salt into this mixture
Saute besan with mixture for about 5 minutes
Then add salt, garam masala and aamchur powder (mango powder) to the besan
Mix it well
Turn off the heat
Allow besan mixture to cool

In a separate bowl mash potato
Add chaat masala, salt, boiled vegetables, fresh corriander to it
Mix well
Then add roasted besan masala to the potato mixture
check salt and other flavours

To make cutlet :
Grease a plate with oil
Spread the mixture on plate
Give heart shape to the cutlet or any other desired shape
Dip the cutlet into roasted semolina
Heat 2-3 tspns oil in a pan
Arrange the cutlets on the pan
Shallow fry both the sides of cutlets till it turns golden brown
Serve it with slice breads and tomato ketchup


Notes :

Instead of semolina, you may use rice flour which makes cutlet more crispy
You may add bread crumps to the mixture by reducing the amount of besan / chickpea flour
