Methi Muthia (મેથી ના મુઠિયા) is a popular Gujrati tea-time snack. Muthias are prepared in two ways: Steamed and Deep-fried. You can store Muthias for upto 10-15 days in air-tight containers. Muthias are a key ingredient in the popular Gujrati dish Undhiyu.
2 and 1/2 cups chopped fresh fenugreek leaves (methi)
1 cup whole wheat flour
1/2 cup bengal gram flour (besan)
2 tbspns semolina (Suji / rawa)
1 lemon juice
1 tspn turmeric powder
1 tspn red chilly powder
1-2 tbspns corriander-cumin powder (Dhana-jeera powder)
2-3 tbspns seasme seeds
1 tbspn sugar
1/2 tspn fruit salt
2 tbspns vegetable oil
Water as required
Salt to taste
Oil for deep frying
Method :
Take chopped fresh fenugreek leaves in a vessel
Add salt and lemon juice to it
Set it aside for 10 minutes till the leaves are moist
Then add all flours, spices, and all the ingredients except water and oil
Mix it well
Then add oil and again mix it
Now add water as required
Knead the mixture into a hard dough
Make small balls (pedha size) of the mixture
Roll each of ball on your palm to give it an oval shape
Simultaneously heat oil in a deep pan
Fry Muthiyas in oil over low flame till it turns golden brown in colour
Drain it on absorbent paper
Store it in an air-tight container
Notes :
1. The proportion of wheat flour and besan can be interchanged or adjusted as per the taste
2. Garam masala may also be added to enhance the flavour
3. Some people also add ginger-garlic paste
