Wheat Flour Laddu


Wheat Flour Laddu is a very simple traditional Maharashtrian recipe. It requires very few ingredients, but the final product is awesome. These Laddus are very nutritional and are specially made for ladies who are expecting and have craving for sweets. 

Servings : 15-16 medium size Laddus

Ingredients:
For Laddus:

4 cups Wheat flour

2 cups Ghee

3 cups ground Sugar (Sugar powder / Pithi Sakhar)
1/4 tspn Cardamom powder
1 and 1/2 tspns Milk masala or Coarse dry fruit powder (Optional)

For Garnishing :
Almond flakes

Method:
Heat ghee in a pan till it melts. Then add the Wheat flour in ghee. Roast it in low flame till it starts releasing ghee and an aroma is released. Ensure that the flame is always low while roasting the wheat flour. This process takes approximately 35-45 minutes.

Once the wheat flour changes its colour, switch off the flame. Then add cardamom powder, milk masala and ground sugar to the mixture. Mix well with the help of spatula and knead it with hands. Make medium size tight balls while the mixture is warm. Sprinkle some almond flakes over it.

These laddus may be stored for 10 to 15 days.

Notes:

After the wheat flour is completely roasted, you may add a teaspoon of milk as we do while making Besan Laddu.
The ghee should be Pure Ghee (Sajuk Tup)

Veg. Paneer Rolls


Veg. Paneer Rolls is an ideal snack for children's tiffin. Also, the time taken to make these rolls is very less. 

Servings : Approx. 6 Rolls



Ingredients:

For The Stuffing
2 tbspns Butter
1 tspn Cumin seeds (Jeera)
1 tspn Ginger paste
2 tspns Garlic paste
1 tspn Green chillies (chopped)
2 onions (finely chopped)
1 green capsicum (chopped into squares)
1 tomato (chopped)
1/2 tspn turmeric powder
1/2 tspn red chilly powder
1 tbspn Coriander-cumin powder
1 tspn Garam Masala
500 gms Paneer (cut into cubes)
1/2 cup fresh coriander (Chopped)
1/2 lemon juice
Salt to taste

For Veg. Paneer Rolls 
5-6 Hot Dog Rolls
5-6 tbspns Butter
Veg. Paneer Stuffing
Green Chutney
Tomato Ketchup
Grated Cheese (as required)


Method:


To make Stuffing
Heat Butter in a pan. Then add cumin seeds, ginger paste, garlic paste and chopped green chillies. Saute it for a minute. Then add chopped onion. When the onion gets transculent, add chopped capsicum and tomatoes. Saute and stir till the veggies are cooked. 

After the veggies are cooked, add Turmeric powder, Red chilli powder, Coriander-cumin powder, Garam Masala and salt to it. Immediately add some water so that the spices do not burnt. Mix well and add paneer cubes. Stir it so that the mixture is evenly coated to the Paneer. Add chopped coriander leaves and stir. Switch off the flame and add lemon juice to the mixture.

To make Veg. Paneer Rolls
Take Hot Dog Bread and make a slit in the centre to facilitate stuffing. Heat a pan and put a tablespoon of butter over it. (Alternatively apply butter in the centre slit and outside portion of the bread). Fry the bread on both the sides for a minute. Now apply Green Chutney, tomato ketchup in the centre and fill the stuffing. Top it with the layer of grated cheese. Serve hot with tomato ketchup.

Notes:


You may add veggies like green peas, carrots, beans to make it more healthy. 
You may also bake the bread instead of frying on a pan.
