Strawberry Lassi

Ingredients :

2 cups plain curd
3/4 cup Sugar
1/4 tspn cardamom powder
2 tbspn strawberry crush
3-4 ice cubes
A pinch of salt

Preparation :
Take all the ingredients in mixer.
Blend it for 2 minutes
Serve chilled

Note :
1. Alternatively you may use fresh strawberries also, but in that case blend starberries and then add other ingredients.
2. Sweet lassi can be made from the above ingredients by removing strawberry crush.
3. Strawberry can be replaced with other seasonal fruits like mangoes to make Mango Lassi.

Lal Mathachi Bhaaji

Ingredients:
1 finely chopped lal math Judi
2 finely chopped onion
2 chopped green chilles
1/2 cup fresh grated coconut
1 tbsp oil
1/4 tspn Mustard seed
1/4 tspn cumin seeds
1/4 tspn hing
Salt to taste
1/2 tspn sugar (Optional)

Preparation :
Heat oil in a pan
Add mustard seeds, cumin seeds and hing to it for tempering
Add onion and chopped green chillies to it
Allow onion to cook for 5-6 minutes
Add chopped lal math and allow it to cook
At the end add grated coconut
Again cook it for 2 minutes
At the end add salt and sugar (optional)

Note :
As far as possible take only leaves of Math while preparing this vegetable

Ambe Dal

Ambe Dal is again a traditional recipe. In Maharashtrian homes, it is prepared in "Chaitra Mahina" In "Chaitra" month.
Ambe-dal is accompanied with "Panhe" during Chaitra Haldi-kunku.
Ingredients:


1 cup Chana Dal (Harbhara Dal)
1 medium grated Raw mango (Kairicha kiss)
1/2 cup grated fresh coconut
2-3 Green Chilies
1/4 cup Oil
1 tspn mustard Seeds
1/2 tspn hing
1 tspn Turmeric Powder
2-3 tspn Sugar
Salt to taste
Corriander and coconut for garnish


Preparation:


Soak chana dal for 7-8 hours in water
After soaking remove the excess water
Take chana dal and green chillies in mixer grinder
Grind the dal coarsely


Take dal in a bowl.
Add grated raw mango, grated coconut, salt and sugar to it.


For tempering heat oil in a kadai
Add mustard seeds, hing, turmeric powder to it
Pour it on the dal
Mix well


Garnish it with fresh coconut and corriander


Note :
You may increase the number of raw mangoes to adjust the tangy taste.

Ravyachi Kheer (Rawa Kheer)

In maharashtra the traditional kheer is made from "Gavhle". However, since it is very time-consuming, we prefer Rawa kheer / Shevayanchi kheer. This is also a traditional recipe and a very very simple recipe to cook. Kheer is generally served with puri during festive occasions.


Ingredients:
1/4 cup rawa
3 cup Milk
1/2 cup Sugar
2 tspns pure ghee
Cardamom Powder,
saffron stands soaked in milk
Soaked Cashews - Almonds

Preparation:
Heat ghee in a pan
Roast the rawa in the ghee on low heat
Roast till it gives good aroma or light brown
Add milk and keep stiring it till its consistency becomes medium
Finally add sugar, dry fruits and boil it for few minutes
At the end add Cardamom powder
Serve it warm or cold

Note :
You may adjust the sugar according to taste
