Dabeli


Dabeli is a very simple recipe yet very tasty.  It is also known as Kutchi Dabeli  and it originates from Kutch region of Gujarat. In this recipe, I have used ready made Dabeli Masala. But you may also make it at home and store it. The recipe of Dabeli masala is also given at the end of this recipe.

And lastly, this has won a runner-up prize in the MasterChef India 2 contest!



Ingredients :
For Dabeli filling :
1 cup boiled and mashed potatoes
2 tbspns Dabeli Masala
2 tbspns Dates & Tamarind sweet chutney
1/4 tspn red chilly powder
A pinch of asafoetida (Hing)
2 tbspns oil
Salt to taste
4 tbspns masala peanuts
4 tbspns chopped onion
2 tbspns scrapped coconut
2 tbspns pomogranate pearls
2 tbspns chopped corriander
1/4 cup water

For Dabeli :
4-6 Pav (Pav-bhaji pav)
4-6 tspn butter
4-6 tspns Green garlic chutney
4-6 tspns dates and tamarind sweet chutney
4-6 tspns chopped onion
4-6 tbspns nylon sev
Dabeli filling

For Garnishing :
Masala peanuts
Chopped onion
Pomogranate pearls
chopped corriander

Preparation :
For Dabeli filling :
Heat oil in a pan
Add asafoetida, dabeli masala and Dates and tamarind sweet chutney
Then add mashed potatoes and mix it in the mixture
Add red chilli powder, salt and water
Cook it for 5 minutes
Switch off the flame
Now take a small square tray
Spread the filling evenly in the tray
Now turn by turn add layers of masala peanuts, chopped onion, grated coconut, pomogranate pearls and chopped corriander over it
Allow it to cool for 10-15 minutes
Divide it into 4-6 portions

To make Dabeli :
Slit the pav horizontally (In such a manner that it is open from 2 sides only)
Add sweet chutney to one side and green garlic chutney to the other side
Now place one portion of dabeli filling in the centre
Also put chopped onion and sev into the two halves
Dip the sides of Dabeli in sev
Now heat a pan
Add a tspn of butter
Roast Dabeli from both the sides
Garnish it with masala peanuts, chopped onion, corriander and pomogranate pearls
Serve hot

Notes :
To make Dabeli Masala :
Ingredients :
2 tbspns Corriander seeds
2 tbspns cumin seeds
1 dalchini piece (Cinnamon)
5-6 cloves
2 dry red chillies

Preparation :
Dry roast all the ingredients for 2-3 minutes
Grind it into fine powder
Use as required

  10. I have been making dabeli for 3-4 years now. While they turn out pretty good, its not the same as the dabeli wala. I followed this recipe to the T...and it turned out so good and how!! Thanks for sharing it.

    i havnt tested dabeli with sukhani dabeli masala but i have tested the dabeli with KAPOL MASALA. its there in mumbai. its best and all the dabeli makers use this...
