Apple Tomato Shorba

Since many days I had a wish to make Jain dishes and finally I got a chance to make it. Shorba is a Hyderabadi / Mughlai dish and generally is made by using onions / garlic. However, this version of Shorba is without adding onion / garlic. (Ginger has been used, but even skipping it does not make much difference). Adding apple gives a sweet and tangy twist to this Shorba. 


Servings: 2-3 People

Approx Time: 30 minutes 

Ingredients:
1 large Apple
8 medium sized Tomatoes
2 tbspns Ghee
1 Bay leaf
1 Cinnamon stick
1 tspn Pepper powder
1 tspn Ginger paste (optional)
1 tspn Green Chilly paste
2 tspns Sugar
Handful of Coriander leaves
Salt to taste
Water (as required)

Method:
Wash the tomatoes and chop it roughly. Heat a tablespoon of ghee in a pan. Add bayleaf, cinnamon stick, pepper powder, ginger paste, garlic paste and saute. Now add the chopped tomatoes to it. Again saute it for a minute. Then add a glass of water to it. Take handful of Coriander leaves and place it in the centre so that it can be removed later. Cover the pan with a lid. Turn the flame to high and let it cook for 15 minutes. 

Simultaneously, wash and grate one apple. Heat a tablespoon of ghee in a pan. Add the grated apple to it. Saute it for 3-4 minutes. Transfer it into a bowl and set it aside for using it in the Shorba.

After 15 minutes, remove the lid. Discard the corriander and bay leaf. Now transfer the cooked mixture into a blender and blend it into a smooth paste. Pass the mixture through a siever. Now transfer it again into a pan. Add water to adjust the consistency. Season it with salt and sugar. After seasoning, add the sauteed apple to the soup. Give it a boil. Serve hot. 

Notes:
Alternatively, this soup can be made in a pressure cooker. In this case, cook tomato mixture till two whistles and follow rest of the procedure.
