Even though Oats are very good for health, not everyone likes to eat it in the form of porridge. So my mom tried this savory dish with Oats and was a big hit at home. This dish proves as healthy breakfast item and is good for diabetic patients. This has been made more healthier by using Fortune Rice Bran Health Oil.
Servings: 5-6 Nos.
Preparation time: Approx. 30 minutes
Ingredients:
For Oats Uthappam:
1 cup Instant Oats
1/4 cup Split Black Gram (Urad Dal)
1/4 tspn fenugreek seeds (Methi)
1 tspn Ginger paste
1 tspn Green Chilly paste
1/3 cup vertically chopped Cabbage
1/3 cup finely grated carrot
1/2 cup finely chopped onion
1/4 cup chopped Coriander leaves
Water (as required)
Salt to taste
& Fortune Rice Bran Health Oil
To serve with:
Curds
Green Salad
Method:
Take Instant Oats flakes, Urad Dal and fenugreek seeds in a mixing bowl. Add a glass of water and mix to it. Then transfer the mixture to a blender and blend it into a smooth paste. Cover the bowl with a lid and allow it to rest for 15-25 minutes.
Notes:
1. These uthapams taste best when served hot.
2. Dab half a piece of onion in salt and coat it on the griddle evenly by using circular motion. This helps in making the Uthappam crispier. Some people also sprinkle some salt water over the griddle before pouring the batter.

Then add Ginger paste, Green chilly paste, salt and give it a stir. Then add chopped cabbage, grated carrot, chopped onion, coriander leaves and mix it well. Then add some water to adjust the batter to a medium consistency. Re-check the seasoning after adding water.
Heat a griddle / non-stick Tava on medium heat. Grease it with Fortune Rice Bran Health oil. Then pour a ladle full of batter on the griddle and spread it evenly to give it a round shape like a pancake. Drizzle some Fortune Rice Bran Health Oil over it. Then cover it with a lid so that it gets cooked in the steam. Once the first side is done, remove the lid and flip it. Now cook the second side for a minute till it becomes crispy. Then remove from the griddle and serve it hot with curd and Green Salad.
