Due to hectic office schedule, I had to take a compulsory break. Posting this simple recipe of coconut chutney.
Ingredients :
1 cup fresh scrapped coconut
2 tbspns chopped fresh corriander
3-4 chopped fresh garlic cloves
1 tspn green chilly paste (or 2-3 chopped green chillies)
1/2 tspn ginger paste
1/2 tspn Sugar
1 tspn lemon juice
Salt to taste
Method :
Take scraped coconut, fresh corriander, garlic cloves, green chilies, ginger paste, salt and sugar in a bowl. Mix it. Transfer the mixture into a grinder and add some water to facilitate the process of grinding. Grind it into coarse chutney.
Notes :
To make coconut chutney more tasty, you may temper it.
(For tempering, heat ghee in a Kadai. Add fenugreek seeds, mustard seeds, asafoetida, broken red chillies, curry leaves and a pinch of turmeric powder. After cooling, pour it over the chutney)

Chutney looks yummy..I too prepare coconut chutney quite often,,but never use to add ginger and garlic for that...this is quite new for me..will try this next for sure...
